One Pot Mediterranean Quinoa Chicken

Aside from having the convenience of being able to freeze this delicious tomato-based chicken dish, there’s not much clean-up afterwards either.

1 lb boneless, skinless chicken, cubed
1 Tbsp extra-virgin olive oil
4 garlic cloves, minced
½ cup fresh basil, shredded
½ lemon, juice and zest
Salt and pepper to taste
Olive oil spray
1 onion, diced
2 zucchini, chopped
1 red bell pepper, chopped
2 cups chicken stock
1 (14.5 oz) can diced tomatoes
2 Tbsp tomato paste
1 cup quinoa
