Salmon Salad

Research has suggested that the omega-3s found in salmon help build muscle and burn calories. A diet rich in omega-3s may also trigger the "off button" on the fat-storing gene.

Ingredients 
4 salmon fillets, about ¼ lb each
¼ cup water
2 Tbsp exta-virgin olive oil
2 Tbsp dijon mustard
2 Tbsp pure maple syrup
2 Tbsp lemon juice
2 scallions, chopped
2 garlic cloves, minced
5-oz bag mixed greens
2 endives, thinly slivered, core discarded
2 fuji apples, chopped
⅓ cup walnuts, toasted
How to make it 

Preheat oven to 250°.

Spray a baking sheet with olive oil spray. Place salmon fillets evenly over baking sheet. Spray tops with olive oil (or brush with a couple tsp), and season with salt and pepper. Place in the oven and roast 20 minutes, until opaque and easily flakes with a fork. Remove from...
